Easy Homemade Granola

If you’re always on the lookout for quick snacks that the whole family will love, this easy homemade granola is such a winner. It’s one of those recipes you can customise depending on what you have in the cupboard. Swap out the seeds, add different dried fruits, make it sweeter or keep it simple.


And of course, I love adding the Linwoods Cold Milled Flaxseed, Almonds, Brazil Nuts, Walnuts & CoQ10 blend for that extra bit of goodness. It adds fibre, healthy fats and nutrients without changing the taste, which is ideal when you’re making snacks for everyone!



Ingredients:

  • 1 cup sunflower seeds

  • 1 cup pumpkin seeds

  • ½ cup unsweetened shredded coconut

  • 1 cup Linwoods Cold Milled Flaxseed, Almonds, Brazil Nuts, Walnuts & CoQ10

  • ¼ cup coconut oil

  • ¼ cup maple syrup or honey

  • 1 tsp vanilla extract (optional)

  • ½ tsp cinnamon

  • Pinch of cacao powder

  • Optional: ½ cup dried fruit (raisins, cranberries, chopped apricots)


Granola Method:

  1. Preheat your oven to 325°F (160°C) and line a baking dish with parchment paper.

  2. In a large bowl, mix together all of the dry ingredients.

  3. Add the maple syrup (or honey) and vanilla, then stir to combine.

  4. Melt the coconut oil gently in a small saucepan over low heat.

  5. Pour the melted oil over your mixture and stir until everything is well coated.

  6. Press the mixture firmly into the lined baking dish.

  7. Bake for 15–20 minutes or until the edges turn golden brown.

  8. Let the granola cool in the dish for around 15 minutes. Transfer to the fridge for 1–2 hours to help it set.

  9. Lift out using the parchment paper and cut into squares or bars.


How to store Granola:

Store your granola in an airtight container for up to a week, or keep it in the fridge if you want it to last even longer.


It is such a handy snack to have on the go, lunchboxes, car journeys, or with a cuppa in the afternoon. Enjoy!
